Brusson represents the local heart of the Aosta Valley. It is home to important dairy products and offers a series of typical dishes from the Aosta Valley created with local products.
The Fromagerie Haute Val d'Ayas is located in Brusson, one of the major dairy in the Aosta Valley dedicated to collecting milk from the mountain pastures and to its transformation. Among its productions, we can mention the Fromadzo, produced exclusively at the Fromagiere di Brusson and DOCG certified. It is a semi-fat cheese obtained from partially skimmed cow's milk by natural surfacing from at least two milkings. Fromadzo, which is made by the Fromagerie Haut Val d'Ayas and therefore indigenous to the area, is accompanied by another typical product of the Aosta Valley: Fontina cheese.
In Brusson there are many other producers of cheese and ice cream, wandering around the hamlets of the Municipality in search of producers; from Arcesaz to Extrapieraz passing through the other villages.
